【中文摘要】 以從西南地區(qū)采集的 4個(gè)松茸子實(shí)體為材料 ,測(cè)定了其粗蛋白、粗纖維、粗脂肪、灰分、礦質(zhì)元素和維生素含量。試驗(yàn)結(jié)果表明 ,松茸子實(shí)體中粗蛋白、粗纖維、粗脂肪和灰分的平均含量分別為 11.984 %、6 .74 4%、3.0 0 9%和 6 .94 0 %。礦質(zhì)元素中K、Ca、Mg含量較高 ,1號(hào)、2號(hào)和 4號(hào)樣品的平均含量分別為 3.1× 10 4mg kg、1.6 2× 10 3 mg kg和 5 .5 8× 10 2 mg kg。產(chǎn)于云南昌隆的松茸子實(shí)體中 ,Fe、Mn含量最高 ,分別為 6 2 .2 82mg kg和 6 .0 6 4mg kg ;產(chǎn)于重慶的松茸子實(shí)體中 ,Cu含量最高 ,為 5 2 .84 5mg kg ;Zn含量在 4個(gè)子實(shí)體中差異不大。 4個(gè)松茸子實(shí)體中維生素B1和維生素B2 的平均含量分別為 0 .2 10mg 10 0g和 3.6 6 5mg 10 0 g。
【英文摘要】 The contents of crude protein, crude fiber, crude fat,ash,mineral elements and vitamins were determined using four Tricholoma matsutake fruitbodies collected in southwest area of China as testing materials.The results showed that the average contents of crude protein, crude fiber,crude fat and ash were 11.984%, 6.744%, 3.009% and 6.940% respectively;the average contents of K,Ca and Mg in samples of No.1,No.2 and No.4 were 3.1×10 4 mg/kg,1.62×10 3 mg/kg and 5.58×10 2 mg/kg respectively; the contents of Fe and Mn were the highest in T.matsutake fruitbody collected at Changlong of Yunnan province, they were 62.282 mg/kg and 6.064 mg/kg respectively; and the content of Cu was the highest in T.matsutake fruitbody collected at Chongqing,it was 52.845mg/kg. While the differences in the contents of Zn were not significant in four T.matsutake fruitbodies, and the average contents of vitamin B 1 and vitamin B 2 were 0.210 mg/100g and 3.665 mg/100g respectively.
