【中文摘要】 硒是人體必需的微量元素之一。食(藥)用真菌具有較強(qiáng)的耐硒和富硒能力,能夠?qū)o機(jī)硒轉(zhuǎn)化為有機(jī)硒。對近幾年食(藥)用真菌的富硒研究和產(chǎn)品開發(fā)現(xiàn)狀進(jìn)行了綜述,并對食(藥)用真菌富硒應(yīng)用前景做了展望。

【英文摘要】 Selenium is an essential trace element for humans.Edible and medicinal fungi had the ability of selenium tolerance and selenium enrichment,which could convert inorganic selenium into organic selenium.In this paper,the research of selenium enrichment and product development of edible and medicinal fungi were reviewed,and application prospect was also prospected.
