【摘要】 分別采用還原力測定法、Fenton法、2,2-二苯基-1-苦肼基(DPPH)分析法和改良鄰苯三酚自氧化法,對猴頭菌子實(shí)體水提物和醇提物的總還原力,清除.OH、DPPH.和O2-.自由基的能力進(jìn)行測定。結(jié)果表明:醇提物還原力較強(qiáng),且還原力大小與濃度成正比;猴頭菌水提物和醇提物均有清除.OH、DPPH.和O2-.自由基的能力,且水提物的效果比醇提物好;水提物和醇提物對.OH、DPPH.和O2-.的清除能力依次為DPPH.、.OH和O2-.,并且在一定濃度范圍內(nèi),清除率與濃度成正比。
【Abstract】 The antioxidant activities of aqueous and 95%(v/v) ethanolic fractions of Hericium erinaceus fruit bodies,prepared by extraction at 60 ℃ for 20 mins,were evaluated by measuring both the total reducing power,and hydroxyl,DPPH and superoxide anion radical scavenging capability.Ethanolic extracts exhibited a higher total reducing power,which was concentration dependent,whereas aqueous extracts were more effective at scavenging hydroxyl,DPPH and superoxide anion radicals.
